Steakhouse Burger with Fig and Smoked Gouda

Ingredients
2 Tbsp extra virgin olive oil
1 onion, thinly sliced
1 Tbsp balsamic vinegar
2 Tbsp. salted butter
2 brioche hamburger buns
2 gourmet steakhouse burgers
2 slices smoked Gouda cheese
2 Tbsp fig spread
1 cup arugula

Directions
- Heat 1 tablespoon of olive oil in a pan over medium heat. Add the onion and a pinch of salt, and stir to coat in oil. Cover and reduce the heat to medium-low and let cook for 5 minutes.
- Uncover and continue cooking, stirring every few minutes, until it’s golden brown and jammy, for 15-20minutes. When the onion starts to stick to the bottom of the pan, add a splash of water to deglaze the pan. Once the onion is almost caramelized, add your balsamic vinegar and stir to cook for a few minutes. Then remove from the heat and set aside.
- Heat the skillet over medium heat. Spread the butter on the cut surface of the buns, then place them cut side down in the pan and toast until golden brown. Set aside.
- Gently press the center of the steakhouse burgers to create a shallow indentation. Season generously with salt and pepper.
- Clean the skillet and heat 1 tablespoon of olive oil. Add the burgers, seasoned side down, and cook until golden brown on the bottom, for 5-6 minutes. Gently and carefully press down the center of each burger once to ensure it makes full contact with the pan. Season the other side with salt and pepper. Then, flip and cook until the burgers are fully cooked. Add the cheese when the burger is almost cooked.
- To assemble the burger, spread about 1 tablespoon of fig spread on each bottom burger bun. Then top it with some arugula, the burger patties with cheese, caramelized onion, and the top burger bun.
